Prickly pears: healthy recipe
Following our article on prickly pears, The View from Fez has been scouring the internet for recipes. Here's one to beat the summer heat - and it's health-giving too.
Prickly Pear Health Water
The chromium- and vanadium-rich prickly pears help to keep your appetite suppressed while the potassium and minerals keep electrolytes balanced. The perfect way to enjoy drinking water and diet in a healthy way!
You'll need around 300g of prickly pears. Cut the fruit in half and scoop the flesh into a blender. All a little water and blend to a pulp.
Pour into ice cube trays and freeze. Pop a couple of these pretty icecubes into your mineral water and enjoy!

"In Sefrica we used to eat prickly pears chilled - pick with care to avoid long spines, brush off spines by rolling them in the sand with a stick, wash and peel off the tough skin, chill the sweet interior flash and eat. Probably great with pomegranate or mango juice."
I find them in Mexican markets or stores that have Mexican produce here in the US. Have eaten them out of hand or put them in my juicer along with other fruits and vegetables. They are said to lower blood sugar in people with elevated blood sugar levels and the juice is soothing for gall bladder problems. I have also eaten the smaller "leaves", after the big thorns are burned off, use a fresh green kitchen scrubber pad to remove the smaller ones and fry them in a little olive oil. They make a great veggie sandwich.
The photo of the drink is making my mouth water. Hope to find it the next time I visit Morocco.
